Default Help me with my first smoke on a Weber Kettle!!!!

Since it'll be my first atempt to smoke in the kettle, I'm going to do a couple of fatties. Maple & Hot for my Mississippi trip. I figure 3 of each will do.

I think I'll try to smoke indirect with just 1 basket. I have a few wood chips from splitting logs. Any pointers on how many briqets to start with, and what settings for vents? It's a One Touch 22 1/2".

I usually keep all the vents wide open. If you need to close any - close the top vents.
As for coals - 12-15 in each side basket is usually enough. In one basket? I'm not sure - maybe 20? Are you using a water pan? I sometimes do and sometimes don't. Depends on my mood, I go either way.

Should I keep 1 basket on each side, or put both on 1 side of the kettle? Probably won't use a water pan.

I put one on each side. start the coals in a chimney - put in 12 on each side and see how close to temp I get. If low - add 3 or 4 more each side. Usually works ok.

I've got a 22.5" Weber clone, and I've always used a full starterof charcoal. I haven't got a basket, so I just bank the coals on each side of the kettle, then toss a few wood chunks on top. I've had my best luck with a drip pan with a good amount of water in it. I get a disposable foil pan that most closely matches the size and shape of whaterver I'm cooking. I've always kept the bottom vents wide open, because I had no way to close them until lately, and I haven't used it for indirect since. But if my bumbling, ignorant ass can do it, it should be a breeze for most.

Those Basket's are the schnitz I would invest in a couple love mine. Thillin I would use two baskets and follow BQ's lead.

I'm a basket case myself 'cause I have the one with the hinged grate for easy filling. A mod that would be better would be one that had a hinged side so you didn't have to lift the lid.
