So I just opened my 16lb two pack of butts from Sam's for my first overnight cook and had a surprise. Usually the butts I get from them are bone in. Well this pack had one with the bone in that was trimmed up pretty good. The other had no bone and a huge fat cap. I'm waiting for my WSM to come up to temp and was just wondering if they are going to cook any different? They appear to be about the same size. Does it matter which one I probe for IT? Anyone else had a mixed pack like this from Sam's? Guess I'll have to start inspecting them a little better before I buy them.

Ya the butt's I've gotten from sam's have always had bone in, I don't really like bone out but their butt's always cook great for me but that bone out one I'm going to say will most likely take longer to cook because there's not a bone. Probe the bone in one, it will be done first then probe the other one.
