We do ground beef and the time, it's like a fatty. Weave your bacon, lay out 2 pounds of ground sirloin top with blue cheese and mushrooms roll up, wrap with your bacon weave and smoke that puppy until a super fast GREEN Thermopen reads the correct temp. Let rest and slice put on a bun like a burger.............
