Default Fired up the LSG Large IVS

I did the meat for my MIL's family reunion, so I got the opportunity to bust out the big girl. Did two large briskets, 6 racks of ribs, 5 bone-in turkey breasts, 10 pounds of sausage. I did use the Woodwind Pro for the sausage and started one of the birds on it until the ribs came off. I think next time I will butterfly the breast so I can lay them flat and not have to take out a rack so more can fit on the LSG.

Overall, it turned out great but not my best, especially the brisket. I think I will stick to smaller briskets and just do more. The fat just doesn't render as well on the big'uns.

I apologize for the pics, especially the small ones, I didn't get any at the reunion, so I got these from someone else. And I couldn't get a few to rotate.

...also, probably one of the worst trims on briskets that I ever did. I was beyond tired when I trimmed them and just wanted it to be over.

Very nice of you to do such a large cook for the family! Hope they all enjoyed!

BTW: LOVE the LSG and the stainless steel table! That patio looks very nice as well.

Everyone seemed to enjoy it. This was my second year to do it and they keep asking me to do it again, so I guess it wasn't too bad, lol. I enjoy it as well.

Thank you! It still surprises me how efficient this smoker is. Barely uses any charcoal. It also cooks so much quicker than any other cooker I have cooked on. The two briskets, (1) 20 lbs pre-trimmed and the other 18 lbs pre-trimmed, cooked in 10 hours at 225-250 degree range. I rested it in a 150-degree oven for about 14 hours, longer than I wanted but still turned out pretty good.
