I love me some tacos. Tortillas might be my favorite vessel for stuffing my face! This is my official entry to the Tacos Throwdown!

Tasha picked up some choice skirt steak at the store and I marinated it overnight in some Goya Mojo Criolla.

Got the OTG fired up with some lump and grilled the veggies sprinkled with T&B and beef sprinkled with Cattleman's Carne Asada rub. Served it on fine china with grated cheese and avocado slices.

A chicken fajita taco on the left and a Blackened trout with Mango-Avocado salsa and hobanero-cilantro Crema on the right.

Jerk Shrimp Tacos (aka I Like Tacos - The Sequel)

This is my official entry into the “Tacos” throwdown.

So ever since I got my tortilla press I’ve been on a taco spree. Sprout’s had Colossal EZ Peel Shrimp on special so I did a Caribbean spin on a taco, Jerk Shrimp Tacos with Mango Habanero Salsa and Fried Plantains.

First I made up the salsa. Here are the ingredients:

Chopped

Add the zest of 1 lime then add the juice and stir. Put this in the fridge to rest and get happy.

After everything was ready I made up some fresh tortillas and then skewered the shrimp.

Since this was such a small cook I decided to use my Weber Jumbo Joe. I put a 3/4 chimney of lump of the gas burner to speed things along.

Placed on the shrimp skewers for 2 to 3 minutes per side.

And they’re ready.

Here they are plated with the fried plantains, mint garnish and a Sierra Nevada Ruthless IPA



Here’s the Money Shot below.

Squeezed the lime on them and proceed to eat some of the best tacos I’ve ever had. Off the charts good! :becky:

I love tacos. I made tacos for the food truck TD and had leftover meat and since my favorite thing to make with leftovers is tacos what better to make with leftover taco meat than more tacos out of smoked chuck on a soft shell topped with tomatoes and lettuce and cheese and sour cream. I love tacos.
