In Search of Prok Rinds
I am looking for a place locally to get pork skins for making my own pork rinds. I would also appreciate any tips on the cooking temps in order to have them come out right. I'm tired of spending money on bagged pork rinds that lack in the amount of flavoring or half of which are overcooked and you can't eat them. Thanks for any help and advise.

Amber, I have recently been going to our local State College's ag program. They sell meat to help offset the cost of raising the animals. The meat is higher quality and the price is better since they don't have to compete with the box stores. They may give some to you. Give it a shot.

I remember the good old days when a local farmer would bring me some rinds when he slaughtered. It was when soda came in a 2"high cardboard carton. He would line the bottom of one of those cartons with brown paper bags and filled the carton with rinds he cooked on an open fire in a cast iron kettle of lard. The grease would get sucked up by the paper bags. A few of the cracklins still had some hair on them but we didn't care, just gave those to the dog.
Hope you find some. Seek out a pig farmer.

Do you have any local Mercados with a butcher's section? Most of the ones in Memphis make their own chiccarones and I'm sure they would sell you the raw skin.
