Default AWF cookoff

I don't get too far from the back yard with my
cooking but just for kicks me and a couple of
my buddies entered the local AWF(Alabama
Wildlife Cookoff) last year. We entered late
with a wild hog that was given to us and wound
up winning the "Peoples Choice Award" for best
all around. Well we have been challenged to defend
this year...spent last night getting wood and cutting
up apples, oranges, pineapple etc. Starting cooking early
in the am for tomorrow nights judging. What the heck
it is fun and a chance to cook...o yea we are cooking
a wild hog.

Second place in the game division..Got beat
by a buffalo steak....We didn't have a hint of
hog left over....How a piece of bison found it's
way to Alabama is still a mystery...I think the
novelity of it won for them over taste. Our hog
was awesome!!! We had a blast and raised over
$8k for a good cause. The winning team of each
division game, fowl, and fish goes to state level
competition next. Anybody got a buffalo hind quarter
to spare???

Nothing special Neil. When we wrap in foil we put quartered
apples, navel oranges, and sliced pineapple(real/not canned) on the meat. The fruit is discarded when the foil is opened. It's not a dominate flavor,but rather a hint of a sweet fresh fruit taste.

And hey ya'll, thanks for the kind words of encouragement.
Great or small doesn't matter in this family...doing it better
and sharing does.
