The oven itself can be used as a smoker, if used/done right. I was thinking about adding a completely separate smoker cabinet but i decided it would be too much and would take up more space. I am building a BBQ pit, its pretty deep so i can smoke in that also, i plan on making a hinged door for the BBQ pit so i can smoke in that also.

I FINALLY started on the dome today. We got a good amount of work done for 5 1/2 hours.
Here were laying 4" of Calcium Silicate insulation board. Here is floor laid out, no fireclay/sand needed, except in some low areas. Then we started to move along. The form isn't really being used except to just have a general idea of how the dome circulates, it will become more useful at the top.

Looking good, ROCK ON!!
My wife is flying into Ontario tomorrow and will be in West Covina this week at one of her branches, fortunately it does not look like you need an inspector yet. BTW, nice grouting work on the inside, stay with it. If you take a look a some of the pics Carbon posted, his looks perfect. I however, have some touch up to do on the inside... Just having too much fun to not use it for two weeks. Thermal

Like most of us dreaming about doing this, I've put a lot of thought into it as well. I'm sure you could use the oven as a smoker, but I'd be worried about getting it built up with grease and gunk causing off flavors when cooking breads and what not. Having said that, I think the idea of putting a hinged door on the grill like a Texas pit smoker is brillant. Can't wait to see it cook! Sent from my pocket computer ( G III) |

Re: Building a 42" Brick Pizza Oven & Grill.
Any thoughts on building up a back splash behind the grill and sink? It would keep stuff from falling behind it, if nothing else. Just a thought....
