Hi all, wanted to share a couple pics of some ribs I made while camping last weekend. I used a Jumbo Joe and PartyQ I modified for off-the-grid smoking. I used this setup a few times now and the results are always pretty solid. This particular cookout was at around 8500' near Mt. Antero in the Colorado Rockies.

Looks very nice. I have been in the NC mountains the past few days and this elevation affected our cook times, I can only imagine that yours was that x2.
 
Buena Vista - Salida area is awesome. Very nice cook in one of the most beautiful parts of the world.
 
Looking mighty tasty.
I tried to cook pasta in Breckenridge one time and let's say-
it was mush. Challenging cooking at altitude.
 
@JeffJ, thank you. My buddy gringed when I was drilling the hole for the ATC port. Now after enjoying the fruits of my labor on several camping smoke-outs he is a believer. :becky:
 
your camping ribs look better than my "full sized" cooker ribs! Well done. Love the joe, i think I own 5. Great lil cooker
