Default Hot and Fast at the comp!

We went to the Chili Super Bowl cookoff this weekend and had a blast with the family and the new cooker.

Saturday we turned in ribs, chili and beans. It turned in a second entry for ribs and made if al table with both entries and also made final table in chili. Sunday we turned 2 entries of brisket and one entry of beans. Got 3rd in brisket and 1st place beans.

I cooked the ribs and brisket hotter and faster than I ever have and I can say I will continue to do so. Only so I can get more sleep! LOL.
We had a good time and made enough money to pay for the weekend.

I cooked the ribs at 275 and the brisket at 315. The brisket was 12.6lbs and was done in 7hrs. I cooked it fat up 4 hrs and put it in a pan for 3 then wrapped it up tightly in Saran Wrap for 1.5 hrs t rest. For those who check temp the very center of the brisket was 207.
I didn't get a pic of it cut but it looked good.
