Venison Backstrap-n-Wild Onion Sauce

The wild onions are showing up around the farm. I like to use them while they are available.

I cooked the onions with garlic in butter until tender, added sherry, capers, lemon juice, salt and pepper to taste and a small bit of cornstarch to thicken.

seasoned the venison steaks with oil then Tatonka Dust...
grilled to medium rare.

I've been getting a lot of good use out of the deer meat. Made a lot of chili and stew over the winter.
Really love the backstrap steaks though. :grin:

Superb! A1, Top Knotch! also yummy.
 
I like the fact that you did not cook the venison to be overdone. I see so many people who wont eat it unless it is well done and dry. I like my steaks just warm in the center and juicy. I like to leave the loins in six 0r eight inch chunks and season them , then wrap them in a bacon weave( per your tutorial, thanks) and throw them on the smoker.

Oh deer, what a lovely looking meal, Jeanie! I have yet to try eating venison--have yet to get the chance-- but spying yours sure makes me want to all the more. And your special sauce looks 5 star savory!
