Recipe: Baked Mojo Fries (pic)

Baked Mojo Fries

Here's a quick, easy, and no-fuss side that would be welcome along side
any grilled carnage. Not only are these simple, but they are a hearty and
relatively healthy alternative to regular fries.

Ingredients
6 small Russet potatoes
1/4 cup Canola or peanut oil
2 Tbsp Your favorite barbecue seasoning (I used Kosmo's Cow Cover)
2 Tbsp Corn starch

Method
Preheat your oven to 375º.

Wash the potatoes, and dry them with paper towels.

Cut each potato in half lengthwise, then cut each half lengthwise into
three equal wedges, and put them in a large mixing bowl.

Add the oil to the mixing bowl, reserving one tablespoon.

Toss the potatoes in the oil to coat them.

Combine the barbecue seasoning and corn starch in a small bowl, and mix
well with a fork or small whisk.

Add the seasoning and corn starch mixture to the bowl and stir the
potatoes to coat them evenly.

Oil a large lipped sheet pan well with the reserved oil.

Pour the potatoes on the oiled pan and arrange them so that they each
wedge is sitting on the skin side (cut sides up).

Bake for 45 minutes, or until the fries are golden brown and crispy.

Serve and enjoy!

I served mine with homemade fry sauce.

(Makes about five servings)

Almost reminds me of trash bad potatos. I love these kind of frys though. Have you ever mixed bbq sauce into mayo or fry sauce? thats the best right there.

Fry sauce is the greatest dipping sauce ever known to man!

Since i dont have kosmos cow cover, what else could i use. Let me re word that. Is kosmos cow cover sweet or is it just mostly spices?

No, I've never tried BBQ sauce in fry sauce. However, the thought has crossed my mind
a time or two, so I might just have to.

i like it! i take sweet baby rays or any of bbq sauce kind for that matter and mix it either with just mayo or with fry sauce!

Its good. just dont over do it. haha
 
I got the idea to mix BBQ sauce with mayo after eating at Red Robin and having their onion rings and they gave us something they called western sauce. I commented on it being good and the waitress told me it was just mayo and BBQ sauce so later at home I tried my spicey Chiplote BBQ sauce and mayo and it was even better than theirs.

John thanks for the recipe on potatoes it sounds like an other recipe of yours I will have to try.

That's one of my favorite ways to do potatoes, and yours look awesome! Nice job as usual, John.
 
I think I just determined what I'll be having with my smoked chicken today.

What is the recipe for fry sauce? I have never heard of it.

Nice looking wedges. Mayo mixed with some chipotles is good too or whipping up your own garlic aioli...

Will have to try mixing BBQ sauce with mayo - never tried that before - bet it'd be tasty!
 
It's been mentioned earlier, but fry sauce is simply equal parts ketchup and
mayonnaise, but many jazz it up with other seasonings. I put a little ranch
and hot sauce in mine.

Here's a healthier version that I came up with today to go with some
quesadillas that I made from the leftover grilled chicken and fries. The family
actually liked this more than the traditional sauce.

1 cup Sour cream
1/4 cup Sweet barbecue sauce
1 tsp Garlic salt
1 tsp Your favorite hot sauce

The Utah-based Arctic Circle restaurant chain claims to have invented fry sauce around 1948.

@john: sourcream rather than mayo. thats a good touch. Sour cream is pretty awesome. its really good with horse radish and parsley
