Deboned hog

For all the hog cookers out there. I'm at the Meadow Creek auction. There is a guy deboning hogs, 175 pounders, before stuffing with chopped shoulders. Has anyone done that? I'm thinking I have a new idea to try.
 
Tommy or Billy from Smoking Dudes must be there...they do a lot of hogs that way. It makes for a nice neat package of pork when its done. To me, a whole hog should be cooked with its bone, to each their own. The final product, while moist, lacks flavor.
