Default Armadillo eggs for an event

So I am part of a large fundraiser in May. I was planning on selling Armadillo eggs along with the standard pork,ribs,,chix,brisket. So here is the question.

We are expecting around 10,000-12,000 between 2 days. as wondering what quantity of eggs to make? I will of course have help making them. any help would be great.

Hard to say with that amount of people, you should cut one open and put out a display with a brief desrciption. A lot of people do not know what they are. Once they try them, they will be hooked. This is shooting from the hip, but I would cook around 400, they are freezable if you do not sell out. What ever you don't sell you can send my way. You may need to really push people to try them.
