Hot & Fast P.P and Smoked Jerk Wings
Howzit everyone, I did this on the 4th of July...
Did a Hot and Fast Pork Butt, on my Weber Performer... Stacked the charcoal w/ Guava wood chunks Set up my 2 tier smoker! I did it this way because I was too lazy to take out the WSM, and just "because" 2 butts ready to go rub down with "Butt Rub" thanks JD!! Ready to go on the Performer! Can you see the "SWEET BLUE MAGIC"? Check out the fence my wife and I constructed! This was after 3 hours, Looking Good!! My Fathers day gift! (great service by 5-O BBQ, www.bbqequipmentstore.com ) This was after 3 hours, I love my Maverick!! During the cook, I went and picked this up!! First time I got the same prices as you all! 7.89/2 pack!!! 280lbs!! I'm set for the year! I also did some Jerk wings! made up my own rub, still not up to par, lacking some zing, but it tasted great! This 2 tier system worked great! Oh so good! Pulled Pork came out moist and delicious! Total time was about 5 hours...not bad!!

Looks great. I did my first high heat butts last month and they were awesome. Unless I need to put other things on the smoker at a lower temp I may never go back to low and slow for butts.
