I had a hankering for some red beans n rice tonight. Thawed out some of my andouille, made up the "holy trinity" of celery, green pepper and onion , then cheated and used a can of Blue Runner Cajun beans.

I love those things. A little more work to make then say, using a box of Zatarains (which is mighty good in itself), but not as much as from scratch.

Still turned out dang tasty.

Thanks to....bbqbull? I think? for turning me on to those beans.

Yep, that was me and I love those beans.
 
Mmm, looks good, I like Camellia Beans products myself. Hard to find out here though.

Down here red beans and rice is a Monday tradition. Back in the day the women would soak the beans all day on Sunday and cook them all day on Monday while they did the wash.
 
Super food, and especially so considering that you made that sausage.
 
red beans, rice and your favorite spicey sausage is a great start to a flavor explosion. Looks wonderful!
