Cevapi wrapped in Leek.
This worked so well.
Cevapi is a Balkan Sausage Blend that is available here in My local area. I believe your favourite blend would be worth trying. The leek leaves I microwaved (thanks Cowgirl ) after washing to get the grit out. 2.5 minutes at 1000 watt, then wrapped in paper towel to keep it soft. Brushed with a garlic butter, wrapped then in the fridge to set to hold the shape. pictures speak better than I talk. Thanks for looking in

Indirect the whole way, and its skinless sausage mix.
The smoke taste was big and those dark ends tasted sweet.
