Talking A medley of pork on the UDS.

Have my Step-Fathers birthday today and since I like him I figured I would hook him up with some smoked pork. Got the UDS runnin on some mesquite lump and a few chunks of apricot wood. About two hours in on the Baby backs, about an hour in on a chunk of porkstrami (saw it done here an had to try it out) and I just put a variety of sausages on. When we cut it up to eat I will post more pics.

Hit the ribs with a sweet lemon/pear glaze and pulled them when they bent nice and easy. Wrapped and resting now.

I was discussing it with my Step Father today and he said a hand held belt sander should do the trick. Hoping to get it done by the weekend.
