I made some homemade smoked meatballs and homemade sauce today and paired the sliders up with some grilled tater fries.

Well it is true what they say that great minds think alike but every once and a while I'll also think the same thing
 (go figure).For me Funky screamed Soul Food and Soul Food screamed Chicken and Waffles but to make it funky I went in a different direction and turned it upside down. It went something like this.  I decided to do some funky boneless chicken thighs Sweetly Seduced with SM Sweet Seduction. Here are the thighs Boneless and Funky.  I like to do a simple brine with water kosher salt and sweet seduction for about an hour.  Then patted dry and Sweetly seduced again Before going on the grill.  On the grill.  The Waffles I made funky by adding bacon and cheese to the batter and topped it all off with a fresh peach Compote made with peaches, brown sugar, honey, cinnamon, vanilla and water.  Thanks for looking it was Simply Marvelous.
