Found some decent-looking ones at Albertson's yesterday so the pork got bumped to next week.

Looks beautiful, what did you use for rub on it?

Whatever it was I am sure it will be my-t-fine
 
Sea salt, lots of ground black pepper, garlic powder, white pepper, a bit of dried parsley, and a touch of oregano. Tiniest hint of chili and cayenne powders. I will spritz with a mix of Worcestershire and apple juice.

The salt, pepper, and garlic are the dominant forces here.
 
My bride grabbed some beef ribs last nite at Walmart. Look fairly decent and will smoke em on the bge in the next couple of days.

I am no expert but did a 3 hours, then 45min foiled with butter and a spritz of AJ, then 1 hour to finish. All at 250 on the WSM. Oak chips for smoke.

I like butter. :thumb:

Edit: 250 was the dome temp. in my experience the grill temp is about 20 degrees less on my WSM.
 
Good lookin' eats right there! I've got a couple of racks of dino bones defrosting in the fridge right now :thumb:.
