Have some leftover Pulled Pork and Pineapple Salsa from yesterdays cook and didn't really want another slider. Decided to make an omelet. Turned out tasty...

Love the pineapple idea. I haven't done the omlet, but have done pulled pork with a couple over easy eggs on top. I'm a sucker for runny egg yolk.

Thanks y'all. It was a good dinner. Tomorrow I need to freeze some of the pork or I'll be having it coming out my ears.
