Anyone else concerned with stuffing the alligator? I always understood not to stuff a turkey if you were doing low and slow as the risk of food poisoning was too high. Am I offbase, and concerned over nothing?

They usually come pre-stuffed with small pets. I prefer a poodle stuffing but chihuahua adds a little Tex-Mex flavor.

I don't think there's a samonella poisoning problem with gator. I think there is a strong "taste like shoe" problem with gator. Plus the cavity is really thin with the bulk of the meat in the tail. So stuffing it might make sense so you get the tail done without the rest of it becoming jerky.
