last comp - Chx Skin

So at our last comp we came in 3rd for chx in the peoples choice and 4th in the comp. What we are having trouble with is the skin. it is perfect from a texture and bit-through perspective, but it shrinks up a bit to much. Anyone care to share how they get those awesome thighs with the skin that folds over the whole piece?

Here are a few ideas you can try:
  • Use thighs with big, full skins
  • Trim the meat smaller than the skin
  • Use chicken breast or chicken quarter skin
  • Use toothpicks to hold skin in place while cooking
