Rare Brisket Pics.....
....for me anyway
I am not prone to taking many pictures period, let alone of my cooking. Just to prove i cook once in a while , here are some pics of Monday's brisket cook on the egg. They were taken on a borrowed camera to boot. Put on the smoker at 195* and ramped the temp up to 305* over a 2 hour period. Foil panned at the 4 1/2 hour mark for another hour and a half. Out for about 25 minutes. Finished at 199* for temp watchers. Could not do any of this until joining the Brethren. Thanks one and all for all of your posts (with pics) that have enriched my journey Paul

Outstanding!!! Paul, I guess this would be your first, "I'd hit that!" I'd hit it hard twice on Sunday too! Looks fastastic. Killer smoke ring! You have begun a pron precedent!
Thanks for sharing. Bob

Beautiful brisket!
Where did you get that neat device to hold your pit temp probe?

I have posted a "few" other pics, but i think this is my first "I'd hit that" from you. Which is strange, because i was under the impression you would hit anything
The probe holder was built for me by Thirdeye Misterbob. I have one of his grate lifters too. Quality stuff http://thirdeyebbq.com/default.aspx Paul
