I'm Jr. Steward this year for our Lodge and I cooked the installation dinner for the Master Elect. I cooked for 60 guests.

The menu was:
Pork loin stuffed with apple cranberry stuffing
mashed potatoes with gravy
broccoli with cheese sauce
and pumpkin cake with cream cheese frosting

all from scratch.........

all I have pics of are the loins, I forgot to take the camera with me to the Lodge.:roll:

That looks awesome! How was it?

It was nice and moist, the stuffing was just right.
The diced apples gave you little bits of sweetness and the
dried cranberrys gave you a bit of tartness.

BTW, I precooked the stuffing.

One guys ate 4 slices! :lol:
 
I would have probably eaten 4 slices as well!:shock: DAYUM! Looks and sounds great!
 
That looks wonderful, I'm sure they all appreciated your fine cooking!
 
Care to give a little instruction on how you prepared them, and a recipe. My father in law would think I was a god if I had something like that layed out next to the Turkey for thanksgiving.
 
Damn!, that looks great.
I still cant get the hook of slicing the loin like that to stuff it, I'm stuck on slicing down the middle and cramming stuff in there.

There really wasn't a "recipe" for the stuffing. I just used bread cubes, celery, onions,
diced Fuji apples and dried cranberries. Oh, and some poultry seasoning too. Then I used
chicken broth to moisten it. Baked it @ 350 till it was done.
I think it took 2 hours, but I made a full size hotel pan.

I filleted the loins out and spinkled them with a rub I make,
spooned on the stuffing, rolled it up and used bacon to hold it all together.
Smoked it @ 240 till 165 internal.

A lil Big Z's Sweet Gold on the side??? :cool:

Not at this meal, but you can bet that it will make several appearances.:-D

Hey Z, fantastic looking grub!! How did the elections go ?

Went just fine. REALLY good friend of mine is Master this year.
Should be a good year.
 
That looks excellent! I had planned to stuff and smoke a boneless turkey roast on Thursday and did not know how for sure yet...now I do!
