Default spatchcock turkey?

I have seen spatchcocked chickens before. Could you do that with a smaller turkey? have one i that didn't thaw in time to smoke this past weekend and i was wondering if it could be done and shorten cook time one night.

Chris, I don't see why it wouldn't work. Probably cook quicker if you de-boned as much as possible. Give it a go and let us know how it comes out.

PM Thirdeye. He has a cool way of seperating the breast from the lower half. It cooks up more even that way.
