Smokin these two beast the weekend of Sept 5 for my parents 45th wedding anniversary. Expecting 50-60 and wondering if adding only one but will be enough, or should I go HAM add a second? Decisions, decisions...

It also directly depends on your side dishes as well.

Put them on at 10:30 and got the UDS dialed in. Ready to ride it out for a couple of hours and then try to get some rest before getting up to put on the butts.

10 lbs of potatoes and 4 lbs of beans, but no sausage. Plus final head count was around 45 or so. We should still be good though. After I repeat what I did a couple of weeks ago with these briskies, I'm going to knock some socks off!!

Pork butts are on! Now to get the temp stable and try not to entice the neighbors too much with the awesome smells that are filling the air.

I'm perplexed at how the meat isn't sliding off those grates...
