Default Reverse-Sear Pork Cops

Apologies for the San Fransisco treat, but the wife wanted it with her meal tonight.

1 1/2" Chops indirect to 130 and then seared to 145.

She likes it!

These chops were solid. S&P only. Nice crust with a white center. Juicy as all-get-out. Wife not happy with amount of pepper, but that's OK...I loved it.

Thank you all. I've got to get back down by my parents, so making my wife happy before I leave was a priority. Mission accomplished!
