Christmas Day Briskets
Got a couple choice briskets today at Sam's. Approximately 15 lbs a piece. Stuck them in the fridge until Christmas eve when I'll trim and start PMTs tri-level rub funk. I'm assuming they should be fine sitting in the fridge until then but figured I'd check with you meatheads.

if they are in cryovac they'll be just fine. The brisket i did last weekend sat in my fridge for almost 2 weeks until i had a day off to cook it.

i'm not sure how long but i do know that brisket lasts quite a while after being put in cryovac and kept at cold temps. i tried looking it up before and all i can remember was that it was more than a month from packing date.....not the sell date. then again, i'm no expert

My dad insists on letting steaks and other large hunks of meat sit for a few days after you buy them to let them break down! His food is great minus the fact that he can't use a grill to save his a$$.
