IBP pork spares seem to be more in the 3 and under category as compared to Swift or Prairie, which seem to be larger and predominate many stores around here.

These are hot and fast, pig honey style. 285* for about five hours. No look, no wrap, no problem. Tender juicy and succulent. Low salt rubbing brings out more true flavors and I like the difference.

You sauce, you die! These ribs are made for No Sauce! Texas baby!

Good lookin' stuff! I am a big proponent of the no-sauce ribs, and have even been known to grill a rack or two, even though I smoke most of the time.
 
Nice! No sauce for me either. Ribs like that don't need no stinkin sauce.
 
what i like about these are that the pink is not all the way through to the bone. I like that dimension you get that way. These look great.

Nice job bud I do them about the same just cook a little lower but i never warp these.
