I'm not sure about the bones. These look like the middle portion of the wing. I could see maybe stuffing the shrimp in between the two little bones perhaps. If you used a drummette, maybe it you deboned it you could replace the bone with the shrimp.

It got me thinking, that's why I shared.

It also looks like a lot of work, but might be good.
