Injecting Butts
Can I inject my pork butts and leave them refrigerated for 36-48 hours without messing them up? I'm using an injection along the lines of Chris Lilly's recipe, with salt, sugar, juice and so on...... I'm concerned that the meat might get too salty?

I use Lilly's injection for butts, however I have never let it sit that long before smoking. You may risk turning it hammy by letting the sodium in the injection work on it that long.
