Default Having some problems with my new Ortech thermostat

So, I got it all hooked up successfully, but no matter what temp I set it at from 225 all the way to high, it reads 180 and won't go any higher despite running for at least 30 minutes. I've tried several of the smoke settings, but it doesn't seem to matter.

I can't seem to get the Traeger hot enough that I could actually use it with the new thermostat. Any suggestions? I haven't had any luck with the manual providing some insight nor have I heard back from Ortech with my email today. Thanks!
