Thanks.

In preparation for my first brisket on Sunday, I spent Friday night and most of Saturday using the forum Roadmap and Search to read and re-read all the brisket related threads I could. A lot of good info in this forum, but it takes a lot of time to separate the gold from the chatter. Several of those I recognize, but most i don't think I've seen. I look forward to being able to dig into it some more.

You should take your due credit and add this to the RoadMap.

Great research!

I'll never forget my first brisket when I was neophyte Q'r. I cooked it on a direct heat gassor. I didn't know anything about offset heat and smoking. When I pulled it off the grill, the thing was a lump of char that we could barely get enough eatable meat from to feed 4. My wifey and I were newlyweds and we were entertaining her folks. Good thing they all had a great since of humor.

But the experience did help me justify buying my offset smoker several years later.

I can't thank you enough for this! This will undoubtedly save me from asking a lot of dumb questions when I do my first flat in a couple months.
Thank You!!!!

I would love to try that.

You've done us a service, yet again, Donnie. This should be a sticky. Thanks to several of the referenced threads, my first brisket did NOT suck.
