Bout half n half.
Its cut some of the way back but not all the way.
I can't find a shoulder in new hampshire cut any longer.
 
I think Picnics are my favorite meat cooked on the drum! I leave the skin on them and feel the meat is sweeter than butts! Got one in the freezer I'm gonna have to set out for next weekend. The Drum ain't no farkin' Yuppie cooker, who needs the doo-dads!

I don't know, that nap could have been a little longer:mrgreen:

I haven't done a shoulder in a while, thats good stuff.
 
Mighty fine looking pork shoulder. I us a probe but actually i can tell it ready to pull by looking and feeling.
