In celebration of completing my offset drum smoker I smoked up some short ribs.
Smoker. Reverse flow, offset drum. I'll not get back the month worth of weekends it took to build, but it should give me years of good BBQ! (Build thread for those who havn't seen: http://www.bbq-brethren.com/forum/showthread.php?t=144872 ) It works great.
I made a little coal basket. Filled it with coal and lit up a dozen or so coals. Once burning I put them on top of the rest and put it in.
Burned @ 220 for 4 hours with very little adjustment ( I think I had to adjust the valve 3 times ).
Started with a little salt and pepper.
4 hours at 220*
This is the first time I opened it up. The ribs were at 150*. I had a hard time getting the pit back up to 220*, but it got there.
An hour and a half later... 190* and rested.
Plated up with some home pickle mix and sauce and a Pikes IPA
Ridiculous!
