I was born and raised in Iowa, I'm pretty sure the brisket you started with came from a, IBP plant, Iowa Beef Packers.

Look like you did a great job with that brisket, lots of Danish farmers in Iowa including my mothers side of the family who where only two generations removed from Denmark. My grandfathers last name was Andersen. They farmed near Kimballton, a small town in west central Iowa where they disassembled and reassembled a windmill from Denmark in the 1950's and you can visit it in town of Elkhorn, Iowa. I've taken the tour several times, they let you climb up inside of it and they even grind flour on occasion with it.

It's a small world.
