Default Shepherd's Meatloaf....pron

With the wife and kids gone for the weekend and not alot of time to smoke something cause of work, I figured I'd smoke up a meatloaf. Had the meat sitting in spice in the fridge last night, then I suddenly had a craving for Shepherd's pie, so I figured why not combine the two.

Well I went to check on the taters and the cold storage room floor musta gotten too cold cause the potatoes were all soft and shriveled. So instead of admit defeat I adapted, and grabbed a handfull of fries from the freezer, rolled out the ground beef, laid in the fries, scooped in some corn and figured what the hell, rolled up the loaf and set it int he fridge overnight.

Got home from work, and fired up the cooker, stoked the coals till i hit a little above 300*, made some rub and rubbed down the loaf let it sit for about a half hour, then put it in the smoker with some apple smoke.

The results, pretty darn tasty, would have prefered mashed potatoes inside, but I'd do it just like this again!!!

Thanks guys!!! I took the left overs to work and heated it up in the microwave, next thing I knew I had my staff filtering in asking if I had enough for them too!

Markbb I'm gonna have to try the flakes! Thanks for the idea
