I fired up my UDS for an overnight brisket cook.


Threw it on at 1:00am.



The drum did its job. Help temp all night. Got up at 8:00a and it was 241*. Back to bed for a few hours more.

Pulled this beauty off at 11:00am and rested it for an hour.



Sliced it up and ready to enjoy.
