Default Saint Louis Style Spare Ribs

I finally got my UDS back from my neighbor, I loaned it to him almost 2 years ago. Been smoking most everything on the Egg so it was like starting over on the UDS.

Told my wife I was going to do some Ribs on the old Drum. She then says good the best ones you have made were cooked on it. Cooked these Sunday afternoon.

Got the Drum fired up and waited for the Sweet Blue. I cooked these around 265º, did a 2.5-1.5-30min cook





Ribs rubbed with John Henry Pecan.





Had to leave for awhile and rain was expected.



After 2 1/2 hours I was ready to Foil them.



After another hour and a half ready to come out of the foil.



Getting ready to sauce them, used some Bull's-Eye





Ready to come off.



Sorry no cut shots, everyone was hungry, my Grandson was yelling Hungie, Hungie. These were some of the best I've done, nice bite through and very tender.
