Default Pics from Catering Jobs

Here's a little chicky and fishy tease. Had two catering jobs this week. Chicken and pork for one. Chicken, pork, and salmon for the other. Salmon was a huge hit. They'll order twice as much next time.

Michael likes to taste seasonings. He'll put some on his finger and eat it straight. I have to watch him because sometimes he'll taste rub from the table or counter after I've seasoned raw meat. I caught him stealing a taste of rub off of the foil. BUSTED!!!

I keep telling him that he'll get sick, but he just doesn't get it.

Those are great looking pics and the kid is handsome but with all the chicken above the fish, did the fat drippings affect the taste of the fish? Just curiuos.

Not that I could tell. The chicken was almost fully cooked by the time I put the salmon on. I put the fish below the chicken. My rule of thumb is that raw meat always goes BELOW cooked meat. Managing racks and meat position is one challenge with a vertical space.

The chicken in first two pictures were about 2/3 of a 40# case. The rest of the 40 lbs of chicken was cooked the next day for cater #2.

The salmon fillets were exactly 2 lbs. each.
