So a good friend of mine asked if I could do a couple briskets for his motorcycle shop grand opening. He had 2 friends already doing ribs so I bit the bullet and agreed to do 2 of them. Before trim they were just over 14lbs each and went on the Rec Tec around 12lbs. I injected both with kosmos reserve brisket injection and I coated 1 with kosmos cow cover and the other with blues hog bold and beefy. cooked at 225. 1 came off at 10 hrs @ 203 the other at 12.5 hrs @ 201. They were both awesome but the 1 that went 12.5 was a bit better. They were only out for about an hour before they were finished off. Here's a few pics. The pics of the cut up are the same brisket.

Very nice! I love when 1 takes hours longer than the others.

Thanks a lot. They were within 3/4lb of each other and the 1 that took longer stalled hard. It took 3hrs to get from 196 to 201 but those few degrees made the difference in it probing tender. Good thing I wasn't in a hurry.

You exercised the greatest brisket skill there is - patience. Those slices look great.
