Decided to put on some beef ribs today, all due to the wonderful pron the Brethren has been posting lately. Also, I figured I may as well do something that would qualify for the Throwdown in progress.

Nice to find ribs that haven't been mutilated, these were quite nice.

I received this a while back, and wanted to give it a try...What better time than now.

And I never tried Dizzy Dust on beef, so I gave that a go on the smaller racks.

Let them settle in while the BGE was working on the sweet blue.

Looks ready to me...

On the rack they go...

About 2 hrs in...

Time for a little rest...

The finished product, they turned out pretty well I think.

I always get my beef ribs from Gene's Fine Foods in Pleasanton.

I think that stuff is called "garnish." It is supposed to make the plate look better but I think the ribs already make the plate look better.

No oak today, I used hickory.

it was okay, really mild on beef. But then again, I didn't over do it either.

Some real tasty looking ribs there Tim! I saw your other post about the price being high but I gotta tell you I almost bought some at $1.98/lb today but they didn't look anywhere close to as meaty or as good as those you bought.
