BBQ Brethren "Let's Do it Aussie Style" Throwdown! (Entries and Quality *CLEAN* Discussion Only)

My official, hopefully clean entry.

Okay farkers. Ooops, can I say "farkers' here? :oops:

Yes, I am using one of the crutch meats, but they call it something else downunder, and it was the best meat I could find today.

I was in the mood for surf and turf, and it just so happens that Aussie sheep farkers (ooops, did it again), like surf and turf -- at least according to the internet.

So, I gots me a thick USDA Choice Scotch Filet, and seasoned it up with k-salt and black pepper. Then, I let it rest and soak up that salt and pepper goodness.

I then skewered my 15 count jumbo Gulf prawns (shrimp to the rest of us). Coated them with olive oil, and seasoned with k-salt and black pepper.

While those rested and soaked up the flavors, I made a beer sauce.

I sautéed sliced onions, sliced jalepeños and diced garlic in olive oil, then added cream and beer. I let it simmer to reduce down to a sauce, then added some butter.

Time to grill! Steak first.

Yeah, I learned by lesson over two years ago. "Do eggplant, Gore!" "I love eggplant." "I'll vote for eggplant." -- Yeah, right. I'm not falling for that again. Farkers! Do you think I'm stupid? :tsk:

I have always loved the Eggplant dishes. We see far too few of them in these TD's. For a while, you made it "vogue", but it has been AGES since we've seen a good Eggplant entry.

I would vote for Eggplant on pure principle.

Oh, since this is an Aussie TD...isn't it Aberguine instead of Eggplant?:confused:

Eggplant is the common usage but we all understand aubergine.

Beef ,Onion and Ale, Shepherds Pie Floater.
All cooked in Weber kettles.
Lets start,
Grass fed Chuck beef, sliced and browned over a Heatbead and Charcoal Mix.

1hour cooked onion in skin untill nice and sweet.

Add Ale.Pepper beef stock and garlic to pot and Smoke for 4 hours untill sweet and Rosey.

Von makes the Shortcrust pastry from Scratch, then Blind bakes the shells and loads with Sweet nector.

Fabulous floater there, Titch! That little delight has heartwarming comfort written all over it. I'd luv a place at your table!

Grass fed beef is not so easy to get in my parts. At first I thought you used the hard split peas, but see that wasn't so. What a neat idea to do that with fresh ones. No kidding brother,-- I was planning on doing a sort of deviation of a shepherd's pie for my entry! :hungry:
