Default Spares (Pron-Heavy)...

Did some St. Louis Spares yesterday and used butcher paper - was thrilled with the results as were those eating them. I rubbed two racks with brown sugar before I put then in the paper. Third rack did not - brother in law wanted spicy so I used a hot BBQ sauce on his. No sauce on the others. Yardbird was the rub of choice, about an hour prior to hitting the smoker. Kept the temp around 225 the entire cook because that's where the Safe wanted to ride. Here is the pron:

Thanks guys! They came out great. I'm very impressed with my Pitmaker thus far. Everything I've cooked on it has been exceptional.
