So I saw Jeannie's Caldo de Res a week ago or so and have been wanting to try it. Yesterday was a sunny, drunken day of cooking. Today is rainy & gloomy, sounds like a good day for some soup... Here's hoping I can do it justice...
The local Mexi Mart had some short ribs on sale, so I picked up a package of those and a package of beef neck bones. A little S&P and into the FEC for some smoke...
Threw in an onion and some beef broth to get a bit of smoke...
Couple hours later, took em out...
And into the broth to braise for a few hours...
