With smoke, and only meat, and then only meat that's smoked until done. Smoked fish or cheese would not qualify as examples.

This is meant to be light hearted and fun, however expressing what we feel either is
or is not BBQ. I've stated my opinion. And, to some degree, if I've burned it, it's
probably BBQ. Seriously, my vote is in. It's just one opinion...

Well, not necessarily low and slow either...I like to use hotter temps too.
Edit - maybe the "if I've burned it" one qualifies for that.

BBQ is meat cooked by heat from a woodfire or woodcoal fire. Indirect Low and slow, hot and fast or more direct West Texas Cowboy style. That is what I consider BBQ in 2010. Real pit BBQ is irrelevant as it is an antiquated method and therefore has become a novelty.

I agree with Arlin... Indirect Heat. A brisket cooked in 5 hours at 300 degrees is as much BBQ as a brisket cooked all night at 225 as long as it is cooked over indirect heat. The main difference is in the amount of beer consumed

Of course, that means that I can't vote in the poll since cooking using indirect heat isn't an option
