Little brisket cook. Duroc Pork butt above, but I just love the brisket look. The duroc I got for 1.99#. Took several pics of both, but the brisket just does it for me.

Last cook before we introduce a little girl into our world on Monday. Hope she likes brisket. Few things get me more excited than smoking meat, but this little girl coming has got me. Can’t wait for Monday and to meet her. Use the first picture of the brisket.

Lets give this a shot. Extra thick boneless strip, seasoned with 407BBQ rub and threw it on the Big Joe for some mesquite smoke til about 110.

This is an entry.

I took some chuck short ribs out of the freezer and seasoned them with The Judge and Justice for All from www.thebbqsuperstore.com.

They went into one of my Hunsaker drums at 250 with some hickory.

They took just over 5 hours, no foil.

We ate some for dinner with some Brazilian cheese puffs from Costco (also cooked in the Hunsaker) and some home made Cole slaw.

This was a Jeanie Cowgirl inspired cook. Not as good. Just inspired.
Two NY strips rubbed with q-salt and ground coffee, smoked and seared.

Fried a pan of shrimps with garlic, onion and cherry tomatoes.

Then added some bechamel sauce.
