Football Sunday Realtime Cook
Choice Beef Ribs. Rubbed with 1 part course ground pepper, 1 part kosher salt, 1/4 part garlic. It is a dry day so I am trying out a 50/50 mix of water/worchestshire sauce in the water pan. Have the kettle setup with 1 side indirect cooking @ 275 using KBB and some walnut wood. Got it on the smoker about 1030am EST.

3 hours in and they are looking good. Temps have held steady about 275-300. I had to add more coals just now as the temps were starting to drop.

Forgot to take a picture but I had to wrap the ribs as the color was at the point to where I want it at but still has a little while to go.

Ribs are off and resting. I roasted some potatoes and hatch chiles off and made these things.
Cream cheese and Hatch chile stuffed potatoes. Just put them onto the kettle to finish up cooking. Once they come off it is going to be dinner time!

I was debating what came out better, the potatos or the ribs. I couldn't decide.
