Been curing my fresh bellies all week and today is the day I finally get to cook em!
Sure did fill er up... Maybe it's time for a bigger pit, or maybe next time a smaller hog ;)
Can't wait to fry up a slice!!!

Thanks all. I'll tell you this, curing 24 lbs of belly in my only fridge all week with the wife and two kids at home was a serious juggling act!!!

I started them around 180 and slowly built up to around 225. They hit 145-150 after about 2.5 hours...

It came out good. I'll say this, next time I do it I will do a smaller batch. 24 lbs is a bit much to handle without more room. I didn't really notice the other spices coming through so that part I need to work on. All part of the fun!
